there is a way to make your new domain recognize the old domain as local but I forget exactly which fields the old domain needs to be added to but they are in the global domain document. There mail also be a way to set it up using a second global domain document. If you have a test server you can play around with it until you get it working. Before I figured it out I put a work around in place by using adjacent domain docs to route the mail to another "temp" domain then back again. It was an unnecessary hop but it worked OK.
EDIT> try putting the old notes domain in the internet domain aliases field. I know this does not make complete sense but I think that's how I made it work.
